Gluten-Free baking has saved me from my Carboholic ways more times than I can count! Growing up my mom made homemade desserts every night, she believed that it is healthier to make things from scratch than buying packaged desserts (all I know is I benefited).
When I first became GF, I tried to make muffins and brownies from scratch only to end up with a carboard tasting blob. GF recipes often contain ingredients that are tough to find like Xanthan gum, psyllium husk powder, and guar gum. Most recipes require the mixture of multiple flours and odd measurements which makes for a stressful baking experience!
My mom and I realized that making box mixes was our best bet if we wanted to be successful in GF baking. Companies like Betty Crocker, Pillsbury, and Simply Mills make amazing mixes (I’ve been told a time or two that my GF cupcakes are amazing).
In the past couple years' companies have created a cup for cup GF flour mixes (meaning they can be used as a simple substitute for flour in any recipe) for all-purpose baking and cooking. These flour mixes have revolutionized GF baking from scratch! The issue with combining different flours is that it doesn’t always work for every recipe; which is why these cup for cup mixes are so extraordinary.
Cup for cup GF flour can be used to roll out GF dough, GF puff pastry and even make some desserts from scratch. I have successfully made GF pizza and apple turnovers with the use of GF flour (see my brand suggestions below). I have even used it to make several different family recipes from scratch!
My favorite GF recipe to make from scratch is my grandmother’s brownie recipe which has been altered to be GF and absolutely delicious (thanks Gram)!
